Story
Some beautiful Riesling fruit from a grower in Geelong.
The grapes sat on their skins for a day before being destemmed and pressed, adding a bit of texture and mouthfeel to the wine. It was then kept in a cool spot for a nice, long, slow ferment. The length and temperature of the ferment allowed it to maintain some of the finer aromatics.
The wine stayed in stainless steel throughout the whole process with the intention of producing a clean, crisp Riesling, although some more developed characters have begun to appear, such as apricot and honeycomb. It has also maintained the classic Riesling “petroleum” character throughout the whole making process.
